So, lately I have been cooking a lot of vegetarian food because I have been working with my friend who is a vegetarian~! It has inspired me to look toward other cultures and cuisines because everybody is under the impression that vegetarian food is bland and boring but it is not true~! Below is my recipe for vegetable pakoras and guacamole~!
Vegetable Pakoras:
- 4 medium sized potatoes, grated
- 2 medium sized onions peeled, halved and sliced thin
- Handful of coriander, chopped
- Handful of spinach
- 1 cup of petit pois
- 2 chillies, julienned
- Thumb size piece of ginger, grated
- 1 tsp salt
- 2 tsp garam masala
- 1 tsp cumin seeds
- 1 tsp nigella seeds
- 1 tsp turmeric
- 1 tsp chilli powder
- 100g gram flour
- Water
Mix together well and sieve in the gram flour. It should be the consistency of a very thick batter. Add water or more flour as needed. Fry in oil until golden brown and delicious~!
Guacamole:
- 2 ripe avocados
- 1 chilli, chopped
- Handful of coriander, chopped
- Pinch of salt
- 1 tbs extra virgin olive oil
- 1 lime
Use a pestle and mortar, a fork or hand blender to mash up the avocado, extra virgin olive oil, lime juice and salt. Then mix in the chilli and coriander.
